One of my many upcoming recipes for my cookbook! This is what I call a “Go To” Masterpiece. Its a simple but delicious … salad. Yep, that’s right homies. I made a frikin salad. But OMG. It is a SALAD.

I call it an Indian Chopped Salad. It combines Indian-inspired flavors with a Vegan Tofu Paneer, Crispy Rice Noodles, veggies, and a delicious Cumin Curry Lime Vinaigrette. This dish is something you can whip up in less than 40 minutes, and it is so healthy D-E-L-I-C-I-O-U-S. Yummmmmm!

We start with a base of arugula, cabbage, and cilantro. We combine Indian flavors like toasted sesame seeds, crispy rice noodles, carrots, lime, cucumber, and much more! The key to this dish, though, is tofu paneer. We dry out tofu, dredge in cornstarch, dunk in flaxmeal milk, and then combine with Indian spiced flour that we pan fry. 

The crispy noodles are an amazing topper that we soak in hot water, cook in oil/spices, and then broil to make extra crispy! AMAZING. These crispy noodles are literally worth the price of admission.

This dish seems elaborate at first glance but is really easy, healthy as hell, and so amazing. 

This makes salad … AWESOME + VEGAN + YESSSS.

Let’s get into it!

Ingredients:


Cumin Curry Lime Vinegarette

  • 1 medium lime, juiced

  • 2 tbl white balsamic vinegar

  • 2 tbl sesame oil

  • 2 tbl olive oil

  • 2 tbl liquid aminos or soy sauce

  • 1 tbl sriracha

  • Spices: 1/2 tsp cumin, 1/2 tsp coriander, 1/2 tsp curry powder, 1/4 tsp salt, 1/4 tsp pepper

The Rest

  • 2 cups red cabbage, diced

  • 2 cups green cabbage, diced

  • 1 medium cucumber, diced into small matchsticks

  • 4 medium carrots, diced into matchsticks

  • 1/4 cup green onions, diced

  • 1 cup cilantro, diced

  • 3 cups arugula

  • 3 radishes, sliced

  • 1/2 cup cashews, raw

  • 1/4 cup toasted sesame seeds

Paneer Tofu

  • 14oz extra firm tofu, drained

  • 1/4 cup cornstarch

  • 1/2 cup dairy-free milk + 2 tbl flaxmeal

  • 1/4 cup brown rice

  • 2 tbl nutritional yeast

  • Spices: 1/2 tsp cumin, 1/2 tsp coriander, 1/2 tsp curry powder, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/4 tsp salt, 1/4 tsp pepper

  • 1 tbl sesame oil

  • 1 tbl olive oil

Crispy Noodles

  • 6oz vermicelli rice noodles

  • 1 tbl olive oil

  • Spices: pinch of coriander, 2 pinches of curry powder, pinch of onion powder, pinch of salt, pinch of pepper
