Who doesn’t love mashed potatoes? Fluffy, buttery, smashed bits of warm melt in your mouth forkfuls. Y-UHHH-MMM. Its not a complicated thing to make mashed potatoes but the difference between just some mashed potatoes and SOME MASHED POTATOES lies in the way you cook, the way you smash the potatoes (don’t you ever ever blend or use a hand mixer to make mashed potatoes) and the ingredients.

Good mashed potatoes are actually a thing of science. Blending or hand mixing mashed potatoes actually causes the potatoes to release too much starch and become gluey. Smashing the potatoes lightly with ingredients allows them to be firm but fluffy with perfect bites.

When it comes to cooking potatoes, a combination of boiling and steaming the potatoes is my preferred method as it allows you to create a fully cooked potato but still retain some of the bites. Overcooking also helps lead to more gluey, liquid potatoes.

They are called mashed potatoes not liquid potatoes. The other key to me is adding some extra additional yum flavor that we get from vegan butter, green onions, spices, and a few other excellent items.

A very simple but amazing side dish that is 100% vegan and 100% awesome as hell.

Ingredients:


Perfect Vegan Mashed Potatoes

  • 6 medium new potatoes

  • 4 tbl vegan butter

  • 2 green onions, diced small

  • 1/2 tsp garlic powder

  • 1/2 tsp sea salt

  • 2 tbl nutritional yeast

  • couple pinches of black pepper

  • pinch of paprika

  • 1/4 cup shredded vegan cheddar cheese

Other

  • extra green onions, diced, for topping

  • extra vegan butter, for topping


Equipment You'll Need:

Mixing Bowls . Sharp Chopping Knife . Measuring Cups + Spoons . Cutting Board . Boiling Pot . Potato Masher . Colander


Before You Cook:

1. Place new potatoes in a large boiling pot and fill with water until well covered by water. Put on high heat on stove top and bring to boil. Boil for 20 minutes, turn off heat, cover with lid and let steam for 5-10 minutes. A fork should go through potato with ease and slight tension.

2. While the potatoes boil, chop your green onions and place all other ingredients into a mixing bowl.

3. Once potatoes are done, drain in colander. Add to mixing bowl and use a potato masher to mash roughly. Add all other ingredients to the mixing bowl and mix together with potato masher till well blended.

4. To finish, serve the mashed potatoes with extra chopped chives/green onions + vegan butter.
