The Challenge: Chicken Parmesan Sandwich
Do you like cheese? Do you like spaghetti sauce? Do you like chicken or faux chicken? Do you like Italian sandwiches?
Yes, yes, no (because I don’t eat it), yes. Bam! This will be another recipe in my new cookbook.
Well, here is a great new recipe for you - VEGAN CHICKEN PARMESAN SANDWICHES. So, so, so, so, so, goooood. This is the perfect italian spiced chicken seitan. We dredge it, put it in a milk bath, and then bread with panko breadcrumbs. Fry it up in a pan. We then drown it in tomato basil sauce and melt dairy-free cheese over the top of it. Can you say wow? W-O-W.
This seitan is just perfect. We blend in oregano, basil, thyme, and a bunch of other spices into my chicken seitan recipe. We leave out the hot sauce to make it just regular chicken.
The tomato basil sauce is made 100% from scratch with roma tomatoes, fresh basil, garlic, etc. We slowcook down the roma tomatoes, which makes this amazingly basil-y fresh sauce. We pour that over the seitan chicken patties and then we use melty vegan cheese. We use ciabatta italian loaves over hoagie buns.
I really like this bread over the hoagie buns because I like the crispiness that to me blends itself well to the softer texture of the seitan patties. If its just hoagie buns, its all one soft note, so this crispy bread really breaks up that sandwich.
I think you will love this recipe!
