The Challenge: Vegan Sweet Potato Pie
It's turkey season ... vegan-style.
I don't love sweets as I've noted before. So, at the holiday season, I decided to make a delicious savory Thanksgiving dessert - sweet potato pie. This pie is made from a vegan crust and filled with a vegan filling of sweet potato, walnuts, yummy spices, and vegan butter.
A lot of pies are not even vegetarian - did you know that? Lard is used in most pie crusts that are not graham cracker to act as a binding agent for that flaky goodness that makes pies so delectable. I came across vegan shortening that I could use in this crust.
I also got sweet potatoes recently from a local farm here in Georgia, and I thought ... what a great filling for the sweet potato pie. We use vegan butter, dairy-free milk, cinnamon, allspice, coconut sugar, sweet potatoes, and walnuts to blend together a delicious filling.
Turkey day can be a vegan feast, and this will be the first of many Tgiving dishes Vegan Caveman inspired.

Vegan Pie Crust
- 1.5 cups unbleached organic all-purpose flour
- 1/4 tsp salt
- 1/4 tsp coconut sugar
- 8 tbl vegan shortening
- 1/4 cup dairy-free milk + 2 tbl
Sweet Potato Walnut Pie
- 4 medium sweet potatoes, peeled
- 1/2 cup coconut sugar
- 1/4 cup maple syrip
- 1/2 cup vegan butter
- 2 flax eggs (2 tbl flaxmeal + 5 tbl water)
- 1/2 cup walnuts
- 1/2 cup dairy-free milk
- 1/4 tsp allspice
- 1/2 tsp cinnamon
- 1 tsp almond extract
Equipment You'll Need:

Before You Cook:
- Wash and cut all fresh ingredients
