The Challenge: Vegan Sweet Potato Chili

Oh the fall...leaves are changing...sweater weather...football...the crisp air. Aaaaah. CHILI TIME.

I love chili. It is so tasty. Spicy, hearty, warm, salty, and great mixed with some lovely mixins' like avocado, corn chips, vegan cheese, radishes, and some tasty vegan sour cream. Mmm mm mmmm.

I had some leftover sweet potatoes from a recent visit to an orchard where they also grow sweet potatoes. I also wanted to make a slow-cooker recipe. Here's the great thing about a crock pot or slow-cooker. You put the ingredients in the crock pot, turn it on for the day, come home from a long day of work...and you have CHILI for DINNER. Yes!

This chili is a combination of beans, sweet potatoes, crushed tomatoes, broth, and some yummy veggies. The big kicker is the gnocchi. Gnocchi is an amazing potato-based pasta that is typically vegan. A lot of pasta is actually not vegan unfortunately, and many vegans do not realize it when you go out to eat. Gnocchi is an incredible addition to your chili because it adds this really nice texture balance, is hearty and dense, and breaks up the normal chili. Gnocchi is also just frikin delicious.

Vegan Sweet Potato Chili

  • 1 medium red onion, diced
  • 1 medium orange pepper, diced
  • 4 garlic cloves, minced
  • 1.5 tbl chili powder
  • 1 tbl ground cumin
  • 1 tsp garlic salt
  • 1 tbl Old Bay
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbl nutritional yeast
  • 28 oz. can fire-roasted diced tomatoes
  • 15.5 oz. can black beans, rinsed
  • 15.5 oz. can garbanzo beans, rinsed
  • 1 cup vegetable broth
  • 2 medium sweet potatoes, peeled, diced into small cubes

Toppings

  • vegan sour cream
  • vegan cheddar cheese
  • blue corn chips
  • radishes
  • avocado
  • cilantro

Equipment You'll Need:

Cutting Board . Sharp Cutting Knife . Measuring Cups . Measuring Spoons . Strainer . Crock Pot / Slow Cooker . Large Spoon


Before You Cook:

  • Wash and cut all fresh ingredients

1. Add onions and peppers to a large pan and cook for 5 minutes over medium heat. Add spices to the mixture and cook for 60 seconds.

2. Add tomatoes and beans to the slow cooker.

3. Next, add in the sweet potatoes and broth. Turn on the slow cooker and cook for 8 hours.

4. Mix the chili well once slow cooker is done and serve..

5. Mix the chili with a number of toppings, serve, and eat.
