White Bean Vegan Burgers w/ Maple Chipotle BBQ, Fried Green Tomato, and Chipotle Ranch

White Bean Burgers
- 20 oz canned white beans, drained and rinsed
- 1 lemon, juiced
- 1 tbl olive oil
- 1 shallot, diced
- 2 garlic cloves, minced
- 1 cup carrot, grated
- ¼ cup finely chopped parsley
- 1 tsp oregano
- 1 tsp Creole seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- ½ cup panko bread crumbs
- 1 flax egg (1 tbl flaxmeal + 3 tbl water)
Maple Chipotle BBQ
- 2 cups fire-roasted diced tomatoe6
- 6 oz of tomato paste
- 1/3 cup apple cider vinegar
- 1/4 cup maple syrup
- 1/4 cup coconut or brown sugar
- 3 chipotles in adobo sauce + 2 tsp adobo sauce
- 2 tbl vegan worcestershire sauce
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp mustard powder
- 1/2 tsp onion powder
- 1/2 tsp smoked sea salt
- 1/2 tsp black pepper
- 1 tsp liquid smoke
- 1/2 tsp chipotle chili powder
Toppings
- 4 Vegan Caveman fried green tomatoes
- 4 sourdough buns
- 4 slices of Field Roast Chao slices
- arugula
- Vegan Caveman chipotle ranch
Equipment You'll Need:
Cutting Board . Sharp Cutting Knife . Measuring Cups . Measuring Spoons . Food Processor .
Before You Cook:
- Wash and cut all fresh ingredients
- Prep flax egg, mix flaxmeal and water
1. Place the diced tomatoes in a medium saucepan. Add tomato paste, spices and all other ingredients to saucepan. Bring to a simmer over medium heat, reduce to low, and simmer for 30 minutes.
2. Add shallots and carrots to a medium pan and saute over medium heat with olive oil for 6-7 minutes until translucent.
3. Place white beans and lemon juice in food processor and process for 10 seconds until well combined.
4. Mix white bean mixture with carrot/onions and rest of burger ingredients. Form the mixture into four patties (they'll seem pretty large). Place on a medium pan with a bit of oil and saute on each side for 3-4 minutes until browned.
5. To build the burger, place a patty on the bun with slice of the Chao, ranch, arugula, bbq, and fried green tomato.
