The Challenge: Pumpkin Pie Bread

Its November … you know what that means … T H A N K S G I V I N G. The day most of our country kills some turkeys I wanted to make something a little different. Pumpkin pie is pretty delicious, but I wanted to make something a bit more unique. We took the best part of pumpkin pie and made it into bread, mixed in dark chocolate chips, and then with a walnut pumpkin pie dark chocolate topping.

We pop that sucker in the oven and bake it! It is amazing. It is a delicious concotion that you can slice apart, smother in some vegan butter, and devour! I love, love, love this bread, and I don’t even like sweets.

Don’t hate me… but yeah I don’t like dessert. But, this pumpkin pie bread is the perfect blend of sweet, salty, chocolate, and fall flavors that you will love. Thanksgiving has another great dish to put on the counter next to the pie that your family will absolutely love.

But how do we vegan? Well, we replace the eggs with apple sauce. When baking, I really like to use applesauce over other egg replacers because it keeps the bread very moist. I prefer it to flax eggs (which are much better for veggie burgers) or banana, which flavor the dish.

For the dark chocolate, we use dark chocolate chips that are made with cocoa butter, which is vegan yay!!

So slice off a piece and eat it up. Let’s get fat this Thanksgiving! Gobble gobble, save a turkey.

Ingredients:


Pumpkin Pie Bread

  • 1  cup coconut sugar

  • 1 cup organic sugar

  • 3/4 cup vegan butter

  • 3/4 cup unsweetened apple sauce

  • 2.5 cup AP flour

  • 14oz cup canned pumpkin (unsweetened)

  • 1/2 cup water

  • 2 tsp baking soda

  • Spices: 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice, 1 tsp pumpkin pie spice, 1 tsp salt

  • 1/4 cup chopped walnuts

  • 1/4 cup dark chocolate chips

Walnut Dark Chocolate Topping

  • 1/4 cup dark chocolate chips

  • 1/4 cup chopped walnuts

  • Spices: 1 tsp pumpkin pie spice, pinch of all spice, 1/2 tsp cinnamon, large pinch of sea salt

Other

  • vegan butter, for spreading

  • maple syrup, to drizzle


Equipment You'll Need:

Mixing Bowls . Sharp Chopping Knife . Measuring Cups + Spoons . Cutting Board . Kitchenaid Mixer or Hand Mixer . Mini Loaves . Spatula . Knife


Before You Cook:

  • Wash and chop fresh ingredients

  • Preheat oven to 350F

1. To start, add sugar, butter, and applesauce to a mixing bowl. Use a stand mixer or hand mixer to cream for about 2 minutes on low setting.

2. Next, add flour, pumpkin, water, baking soda, and spices. Mix with hand mixer or stand mixer for another 30-40 seconds until well mixed on low. Fold in walnuts + dark chocolate chips.

3. Mix together the bread topping in a small bowl.

4. Next, grease mini loaves with vegan butter. Add the mixture to the mini loaves and sprinkle 1/4 of the topping on the loaf. This makes one large loaf as well if you want to go that route. Bake at 350F for 45 minutes.

5. This makes 4 mini loaves. I only had 2 so I repeated the baking twice. Once done, remove from loaf and cool on cooling rack (optional). Slice pieces off, butter up, drizzle with maple syrup AND ENJOYYYY!
