Tater tots are usually vegan….usually. But in some cases people use butter or fry them in oils that aren’t vegan. Additionally, they are usually fried if you get them from the store and bake them. Don’t get me wrong…I like a good tater tot…but
My mission thus was to create a healthier + tasty version of the tater tot that used no gluten (most use AP flour) as well as were completely healthy with little to no oil used. YES HOMIES! I’ve gone crazy…healthy foods. The tots we came up with were by far more healthy than the competition. They are baked over fried and use no gluten as well as mix together russet/idaho potatoes with sweet potatoes.

But who doesn’t like a simple, straightforward from scratch tater tot recipe to complement vegan burgers, veggie tacos, vegan chik sandwiches, or just on their own. A perfect appetizer or side dish…or just make a big batch and eat them all up yourself.
The key to making good tater tots is parboiling. Parboil is the process by which you don’t completely cook a potato. Why is this important? When you eat a tater tot you want it to be crispy on the outside and soft on the inside. If its too cooked, you’ll have soggy tater tots. If its undercooked, you’ll have raw tots. So, we’ll get it just right in this recipe.
Then we’ll complement it with some catsup and chipotle aioli to just make life a bit better!

Ingredients:
Vegan Tater Tots
2 medium Idaho/Russet potatoes, peeled
1 large sweet potato, peeled
1/4 cup of potato or tapioca flour (sub AP if not gluten-free)
1/4 cup fresh dill, roughly chopped
2 tbl fresh parsley, roughly chopped
Spices: 1 tsp of sea salt, 1/2 tsp smoked paprika, 1/2 tsp garlic powder
Other
Catsup or Chipotle Aioli (1 tbl adobo sauce + 1/4 cup vegan mayo + 1 tbl lime juice)

Before You Cook:
Bring a large pot of water to a boil with potatoes
