It is time for another 30-Minute Meal. Yum, yum, yum! Today, we are looking at a breakfast creation that is epic!!! It is the Ultimate Bagel Breakfast Sandwich, including:
1. Rice Paper Bacon
2. Avocado Smash
3. Herb + Garlic Cream Cheese
4. Fresh Veggies
5. Everything Bagel
This crowd pleaser combines my world famous (okay not really...maybe one day) rice paper bacon layered on a toasted bagel with arugula, cucumber, and fresh tomato. Then, top it with a lime avocado smash and dairy-free vegan herb garlic cream cheese.
Believe it or not, this is very simple dish to make that will only take you 20-30 minutes depending on how fast you chop veggies!
But how do we make bacon? and cream cheese? Easy! Rice paper is the base for bacon. Wet it and it becomes very malleable and able to be baked. We make a bacon marinade and slather that on the rice paper then bake it for 8 minutes. The cream cheese we use a base of dairy-free cream cheese from Tofutti or Daiya or Kitehill or other brands. You pick! We then blend in some fresh herbs and garlic with some spices for an amazing kicked up vegan cream cheese.

Rice Paper Bacon
- 10 pieces of rice paper (spring roll sheets)
- 2 tbl olive oil
- 2 tbl nutritional yeast
- 2 tbl liquid aminos
- Spices: 1/2 tbl garlic power, 1 tsp onion powder, 1/2 tsp chipotle chili powder, 3/4 tsp smoked paprika, 1/2 tsp salt, two pinches of black pepper
- 1/3 tsp liquid smoke
- 1/2 tbl maple syrup
Herb + Garlic Cream Cheese
- 1/2 cup vegan cream cheese, plain
- 1 tbl fresh dill
- 1/4 cup fresh chives
- 1/4 cup fresh cilantro, roughly chopped
Toppings
- 1 medium tomato, sliced + deseeded
- 1 cup arugula
- 1 small cucumber, sliced
- 1 large avocado + squeeze of lime
Other
- 4 vegan everything bagels (or your own preference)
