The Challenge: Cajun Chickpea Burgers
Veganizing food doesn't have to take long. Making awesome vegan food doesn't have to take long. Sometimes you don't have much time but want a delicious plant-based meal. I feel ya. I too can't cook for hours on end! Work, exercise, friends, family, hobbies...we're busy people.
So, I wanted to make an amazing 20-minute veggie burger based off of my love for cajun flavors. The base of this burger is a combination of chickpeas + pistachios. I cannot say enough about how much I love using pistachios in vegan burgers. They add a salty, nutty flavor that is a break from the bland black bean burgers
From there, we added a delicious "bayou aioli" - I'm calling it. It is a terrific blend of ingredients that create the perfect base for this burger. We finish it off with arugula, avocado, and fresh corn. I used very healthy Ezekiel bread as well...cuz why not.
Let's get into it.
Chickpea Burgers
- 1 tbl olive oil
- medium shallot, diced
- 1/2 poblano pepper, diced
- 2 garlic cloves, diced
- 14 oz. canned chickpeas, drained
- 1 tbl organic peanut butter
- 1/4 cup panko breadcrumbs
- 1/3 cup pistachios
- handful of fresh cilantro, diced
- 2 tsp creole seasoning
- 1 tsp Worcestershire sauce
- 1/2 lime, juiced
- 1 chipotle pepper in adobo sauce
- pinch of pepper
Bayou Aioli
- 1/2 cup vegan mayo
- 1 tsp Louisiana hot sauce
- 1 tsp Worcestershire sauce
- 1 tbl dijon mustard
- 1 tbl lemon juice
- Spices: pinch of garlic powder, creole seasoning (large pinch), celery seeds, paprika
Equipment You'll Need:
Cutting Board . Sharp Cutting Knife . Measuring Cups . Measuring Spoons . Mixing Bowls . Food Processor . Frying Pan
Before You Cook:
- Wash and cut all fresh ingredients
1. To start, add olive oil to a pan and heat oil for 60 seconds over medium heat and then add shallots, garlic, and poblano. Cook for 4-5 minutes.
2. Add the rest of the ingredients including the cooked onions/peppers/garlic to a food processor. Pulse until well blended.
3. Take the mixture and form into four patties. Add 1 tbl of butter to the pan you used to cook the onions. Melt over medium heat and add patties.
4. Cook the patties on medium heat on each side for 4 minutes until browned.
5. While the burger is cooking, mix together all the ingredients for the bayou aioli. Yum!
6. To construct your burger, stack the burger ... bun/bread, aioli, burger, avocado, arugula, corn, bun/bread.
